Sour Cream Chicken Enchiladas Mushroom Soup. Onion jalapenos and mushrooms sauté in a skillet. Roll up and place seam side down in two greased 13x9 in.
In a large bowl combine soup sour cream milk and chiles. I usually microwave them covered in parchment paper until cooked through. Roll up and place in the baking dish.
I sliced and sauteed 8 boneless skinless chicken thighs with 1 2 tsp cumin and 1 tsp chili and 3 garlic cloves.
Place 1 2 cup chicken and 1 tablespoon cheese down the center of each tortilla. Reserve 3 4 of this sauce and set aside. Shred chicken with a fork. Feeds family of 4.
